- 1 red onion, thinly sliced
- 2 tablespoons of lemon juice
- 4 tomatoes, halved and sliced
- 2 cups cucumber, peeled, halved, and sliced
- ½ cup parsley leaves, finely chopped
- Soak onion in a bowl of cold water for 10 minutes and then drain.
- Place lemon juice in a large bowl. Stir in the onion, add tomatoes and cucumber and toss.
