There’s nothing better than a refreshing simple, spring salad.
Ingredients:
• 3 tablespoons of pomegranate seeds
• 1 cup of Cos lettuce leaves
• ½ cup of watercress
• 1 cucumber, diced
• 1 avocado, sliced
• 1 orange, sliced
• 1 tablespoon of olive oil (optional)
• ½ lemon juice (optional)
• Salt and pepper to taste
Method:
• Combine all of the above ingredients and gently toss. Enjoy for lunch, as a delicious fresh snack or as a side dish for a larger meal – either way it’s bound to be a favourite!
