The festive season can result in an excess of leftovers! Rather than throwing away perfectly good fruits and vegetables, why not create something new with them?
It’s incredibly easy, with a little inspiration from Hopewood’s delicious recipes, to create and design your own culinary masterpiece or just a great side dish to your next meal.
What sort of meals?
Left over veggies can be used for a plethora of dishes including but not limited to; stir-fries, casseroles, frittatas, soups, quiches, fried rice or or perhaps a more an alternative to plain scrambled eggs.
Left over fruit is great for just about anything! Have a few pieces for a morning tea snack, toss them into a salad, blend and freeze them into icy poles (great for the kids!) or mash them up as a spread on a vita-wheat or rice cracker.
Still too much food? Here’s what to do!
If you’re inundated with so much food you couldn’t possibly eat it before it goes bad don’t fret! Here are a few ideas to salvage your leftovers.
1. Why not pickle your extras?

2. Freeze it for the future
While fresh is always best, it’s handy to have a pre-prepared meal or two ready to go for an unexpected occasion or extra dinner guest. Why not cook up a pasta or rice dish with those leftovers and pop it into the freezer for another day?
3. Have a jam session
When in doubt with what to do with leftover fruit, making a homemade, natural and preservative free jam is always a great option.
