200 grams of tofu, sliced into long 1cm wide pieces
1 handful of parsley to garnish
4 tablespoons of sesame seed oil
4 tablespoons of soy sauce
1. Place the soba noodles into a large pot and bring to the boil. Cook for around 3 minutes until ‘al dente.’ Once cooked, place them straight into cold water and towel dry once cool.
2. Meanwhile, mix the sesame seed oil and soy sauce on very low heat in a frying pan and, once warm, add the tofu and remove when slightly brown.
3. Toss the remaining vegetables in with the soba noodles, top with tofu and left over sauce and sprinkle with parsley and sesame seeds to garnish.
