Nutty floret salad

Nuts are great for livening up a salad and adding some texture. They provide a good source of fibre and also offer other fabulous health benefits. For example, almonds contain the cancer-preventing antioxidant vitamin E and cashews are rich in heart-healthy fats. Try our nutty floret salad.

  • 1 cup cauliflower, cut into small florets
  • 1 cup broccoli, cut into small florets
  • 1 cup snow peas, chopped
  • ½ cup almonds, toasted
  • ¼ cup cashews, toasted
  • ¼ cup coconut, shredded and lightly toasted
  • 1 cup tomato wedges or halved cherry tomatoes 
  • Oriental dressing 
  1. Combine all ingredients in a bowl.
  2. Toss through with oriental dressing and serve.
