Nutty floret salad
Nuts are great for livening up a salad and adding some texture. They provide a good source of fibre and also offer other fabulous health benefits. For example, almonds contain the cancer-preventing antioxidant vitamin E and cashews are rich in heart-healthy fats. Try our nutty floret salad.
- 1 cup cauliflower, cut into small florets
- 1 cup broccoli, cut into small florets
- 1 cup snow peas, chopped
- ½ cup almonds, toasted
- ¼ cup cashews, toasted
- ¼ cup coconut, shredded and lightly toasted
- 1 cup tomato wedges or halved cherry tomatoes
- Oriental dressing
- Combine all ingredients in a bowl.
- Toss through with oriental dressing and serve.
