Pumpkin soup: delicious and nutritious

As the weather cools down, we are again inspired to enjoy some of those cooler month classics. None being more iconic than pumpkin soup.

Pumpkin soup is directly associated with autumn, not only is it delicious but there are numerous health benefits. Studies have found pumpkin contains many key ingredients that can help our body. Rich in vitamin-A, Pumpkin can help protect us against liver and lung cancers as well as cardiovascular diseases.

Pumpkin is also high in vitamin E which can assist with weight loss and protect the skin from sun damage. It has also been found to slow the ageing process, reduces the development of cataracts. Additionally, both the vitamin C and E in pumpkin, can support eye health. Need we say more?

Our Go to Recipe

There are so many recipes out there, but this is our favourite. It’s simple and delicious.

Thai Pumpkin Soup

  • 1 onion, chopped
  • 2 garlic closed, crushed
  • 1 small chilli, chopped
  • 1 kilogram butternut pumpkin, peeled and chopped
  • 1 teaspoon coriander ground
  • 1 teaspoon nutmeg
  • ¼ cup light coconut cream
  • 1 litre Hopewood veggie stock 
  • Fresh coriander to garnish
  • Saute onion, garlic and chilli in a small amount of water or stock
  • Add remaining ingredients and bring to the boil
  • Reduce heat, cover and simmer for 30 minutes or until pumpkin is tender
  • Puree until smooth
  • Serve with a garnish of fresh coriander
