Honey, orange and almond bake
Looking for the perfect recipe to bake on a cool autumn afternoon? Look no further than our delicious honey, orange and almond bake. It’s the perfect recipe to share with friends and family or to enjoy with a cup of tea.
Serves: 6-8
- 2 oranges
- 6 eggs
- 1 cup honey
- 1 teaspoon ground cardamom
- 1 ½ cups almond meal
- 1 teaspoon baking powder
- Strawberry balsamic sauce
- Boil whole oranges for 1 hour, changing the water twice to remove any bitterness
- Drain and cool the oranges
- Blend oranges in a food processor
- Beat egg, honey and cardamom until creamy, then stir in the orange pulp
- Add almond meal and baking powder. The mixture will be fairly soft
- Pour into a non-stick loaf tin or baking tin, lined with baking powder
- Bake in a pre-heated oven at 160°C for 25-30 minutes or until firm
- Let cool in the baking tin before lifting or cutting
