Honey, orange and almond bake

Looking for the perfect recipe to bake on a cool autumn afternoon? Look no further than our delicious honey, orange and almond bake. It’s the perfect recipe to share with friends and family or to enjoy with a cup of tea.

Serves: 6-8

  • 2 oranges
  • 6 eggs
  • 1 cup honey
  • 1 teaspoon ground cardamom
  • 1 ½ cups almond meal
  • 1 teaspoon baking powder
  • Strawberry balsamic sauce
  1. Boil whole oranges for 1 hour, changing the water twice to remove any bitterness
  2. Drain and cool the oranges
  3. Blend oranges in a food processor
  4. Beat egg, honey and cardamom until creamy, then stir in the orange pulp
  5. Add almond meal and baking powder. The mixture will be fairly soft
  6. Pour into a non-stick loaf tin or baking tin, lined with baking powder
  7. Bake in a pre-heated oven at 160°C for 25-30 minutes or until firm 
  8. Let cool in the baking tin before lifting or cutting
