Cream of broccoli soup

Make the most of the cooler weather by enjoying our cream of broccoli soup. Broccoli is loaded with antioxidants and high in vitamin C, so it will leave you feeling healthy and satisfied.
- 1 onion, chopped
- 1 bay leaf
- 3 heads of broccoli, chopped
- ½ head cauliflower, chopped
- ½ litre of vegetable stock
- 4 tablespoons of yoghurt
- Black pepper freshly ground (optional)

- Sauté onion with bay leaf in a water for a few minutes
- Add broccoli and cauliflower and stir-fry for 5 minutes
- Add stock and bring to boil (see Lifestyle-Hopewood’s Recipe for Wellbeing for our recipe)
- Reduce heat, put a lid on the pot and simmer for 15 minutes or until the vegetables are soft
- Remove the bay leaf and blend the remaining ingredients
- Stir through the yoghurt after blending
- Add ground pepper to taste
