Quinoa and Vegetable Stir-Fry

Ingredients:
- 1 cup quinoa
- 2 cups water
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red capsicum, chopped
- 1 yellow capsicum, chopped
- 1 small zucchini, chopped
- 1 small yellow squash, chopped
- 1 cup snow peas
- ¼ cup low-sodium soy sauce
- 1 tablespoon honey
- 1 tablespoon corn starch
- ½ teaspoon ground ginger
- Salt and pepper to taste
Instructions:
- Rinse quinoa and add it to a pot with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the water is absorbed and the quinoa is fluffy.
- In a large skillet, heat olive oil over medium-high heat. Add the onion and garlic and sauté for 2-3 minutes until softened.
- Add the red and yellow capsicum, zucchini, yellow squash, and snow peas to the skillet. Cook for about 5-7 minutes until the vegetables are tender.
- In a small bowl, whisk together the soy sauce, honey, corn starch, ginger, salt, and pepper. Pour the mixture over the vegetables in the skillet and stir to combine.
- Add the cooked quinoa to the skillet and stir until everything is evenly mixed and heated through.
- Serve hot and enjoy!
