Quinoa and Vegetable Stir-Fry

This quinoa and vegetable stir-fry is a nutrient-packed dish that’s high in protein, fibre, and healthy fats. Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red capsicum, chopped
  • 1 yellow capsicum, chopped
  • 1 small zucchini, chopped
  • 1 small yellow squash, chopped
  • 1 cup snow peas
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon honey
  • 1 tablespoon corn starch
  • ½ teaspoon ground ginger
  • Salt and pepper to taste

Instructions:

  1. Rinse quinoa and add it to a pot with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the water is absorbed and the quinoa is fluffy.
  2. In a large skillet, heat olive oil over medium-high heat. Add the onion and garlic and sauté for 2-3 minutes until softened.
  3. Add the red and yellow capsicum, zucchini, yellow squash, and snow peas to the skillet. Cook for about 5-7 minutes until the vegetables are tender.
  4. In a small bowl, whisk together the soy sauce, honey, corn starch, ginger, salt, and pepper. Pour the mixture over the vegetables in the skillet and stir to combine.
  5. Add the cooked quinoa to the skillet and stir until everything is evenly mixed and heated through.
  6. Serve hot and enjoy!
