Winter warmer stew

Warm up your winter days with this hearty and flavourful vegetarian medley. Packed with seasonal veggies and aromatic herbs, this dish will delight your taste buds and nourish your body. It’s a comforting and nutritious dish that celebrates the flavours of the season. Let’s get started!
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 leek, sliced (white and light green parts only)
- 1 parsnip, chopped
- 1 turnip, chopped
- 1 small sweet potato, chopped
- 1 bay leaf
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried sage
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper, or to taste
- 4 cups vegetable broth or water
- Fresh parsley, chopped (for garnish, optional)
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion, carrots, celery, garlic, and leek. Sauté for 5 minutes or until the vegetables start to soften.
- Add the parsnip, turnip, sweet potato, bay leaf, dried thyme, dried rosemary, dried sage, salt, and black pepper. Stir to combine and cook for an additional 2 minutes.
- Pour in the vegetable broth or water, ensuring that the vegetables are fully submerged.
- Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 30 minutes or until the vegetables are tender.
- Remove the pot from the heat and let it cool slightly.
- Serve the vegetable medley hot, garnished with fresh parsley if desired.
