Sesame cucumber salad
This refreshing sesame cucumber salad is a delicious healthy and light snack with Asian-inspired flavours. Enjoy!
- 2 medium cucumbers, thinly sliced
- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon honey or agave nectar (for sweetness)
- 1 clove garlic, minced
- 1 teaspoon grated fresh ginger
- 1 tablespoon toasted sesame seeds
- Fresh coriander leaves for garnish (optional)
- In a bowl, combine the rice vinegar, soy sauce, sesame oil, honey, minced garlic, and grated ginger. Mix well to create the dressing.
- Add the thinly sliced cucumbers to the dressing. Toss to coat the cucumbers evenly
- Let the cucumber salad marinate in the refrigerator for at least 15 minutes to allow the flavours to meld.
- Just before serving, sprinkle the salad with toasted sesame seeds for added crunch and flavour.
- Garnish with fresh coriander leaves if desired.
