Sesame cucumber salad

This refreshing sesame cucumber salad is a delicious healthy and light snack with Asian-inspired flavours. Enjoy!

  • 2 medium cucumbers, thinly sliced
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon honey or agave nectar (for sweetness)
  • 1 clove garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon toasted sesame seeds
  • Fresh coriander leaves for garnish (optional)
  1. In a bowl, combine the rice vinegar, soy sauce, sesame oil, honey, minced garlic, and grated ginger. Mix well to create the dressing.
  2. Add the thinly sliced cucumbers to the dressing. Toss to coat the cucumbers evenly
  3. Let the cucumber salad marinate in the refrigerator for at least 15 minutes to allow the flavours to meld.
  4. Just before serving, sprinkle the salad with toasted sesame seeds for added crunch and flavour.
  5. Garnish with fresh coriander leaves if desired.
