Mango and avocado summer rolls with peanut dipping sauce

Create a symphony of flavours with these Mango and Avocado Summer Rolls. With vibrant ingredients like ripe mango, creamy avocado, and a zesty peanut dipping sauce, these rolls are a delightful dance of freshness and taste.

For the Summer Rolls:

  • Rice paper wrappers
  • 1 ripe mango, peeled and thinly sliced
  • 1 ripe avocado, sliced
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • Fresh mint leaves
  • Fresh cilantro leaves
  • Rice vermicelli noodles, cooked according to package instructions

For the Peanut Dipping Sauce:

  • ¼ cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon maple syrup or agave nectar
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced
  • Water to thin, if needed

For the salad:

For the dressing:

  1. Combine ingredients in a jar and shake well
