Have yourself a merry veggie Christmas
Who says Christmas feasts have to be filled with the traditional turkeys or hams? For the vegetarians and vegans amongst us, having a meatless Christmas doesn’t mean losing all the goodness from the lavish banquet, it simply means making a few changes here and there, so you and your guests can embrace the Festive Season spirit – and munch on delicious food!
And there are actually several customary dishes shared at most Christmas celebrations that are already vegetarian. Foods such as mince pies, roast veggies, cranberry sauce, stuffing, shortbread and eggnog are just a few examples.
Why not make a nut roast, egg and capsicum roulade or marinate some tofu as main course replacements for turkey and ham. Take advantage of summer fruits that are in season and include some native vegetables and herbs, such as desert limes and lemon myrtle.
To get you started, Hopewood has put together two delicious and festive salads. Each of these dishes are healthy, vegetarian and look beautiful when prepared.
Hopewood Christmas Mango Salad
- 1 red capsicum, finely sliced
- 75 grams snow peas, topped, tailed and sliced
- 1 large mango, sliced
- 1 avocado, sliced
- A few mint leaves for decoration
- 1 tablespoons sweet chilli sauce
- 1 tablespoon lemon juice (use additional if needed)
- 1 teaspoon poppy seeds
- Arrange the vegetable and fruit on a salad platter
- Mix the dressing ingredients together and pour over the salad
Hopewood’s Christmas Caesar Salad
- 2 baby cos lettuce, torn
- 1 punnet cherry tomatoes, halved
- 100gms shaved parmesan
- Wholemeal croutons
- 1 cup low fat yoghurt
- 2 crushed garlic cloves
- ½ tsp black pepper
- Lemon juice to taste
- Toss dressing through salad and add croutons
