Chilled summer Bircher bowl

- 1 cup rolled oats
- ½ cup almond milk (or any plant milk)
- 2 tablespoons chia seeds
- 1 teaspoon vanilla extract
- 1 tablespoon maple syrup or honey
- 1 small apple, grated
- ½ cup blueberries
- ¼ cup chopped almonds or walnuts
- Fresh mint leaves, to garnish
- The night before, combine oats, chia seeds, almond milk, vanilla, and maple syrup in a bowl or jar. Refrigerate overnight.
- In the morning, stir in grated apple and blueberries.
- Top with nuts and fresh mint. Serve chilled.
Tip: Add a dollop of natural yoghurt for extra creaminess or some coconut flakes for texture.
