Apple, date & almond crumble cups

These individual crumble cups are warm, lightly spiced and naturally sweetened, just perfect for cooler autumn evenings. Comforting and special, with wholesome ingredients, this desert is very simple to make. Served warm with coconut yoghurt or Greek yoghurt, this is treat the whole family can enjoy.
Fruit base
- 3 apples, peeled and diced
- 6 medjool dates, chopped
- 1 teaspoon cinnamon
- ½ teaspoon ground ginger
- 1 tablespoon lemon juice
- 2 tablespoons water
Crumble topping
- ½ cup almond meal
- ¼ cup rolled oats
- 2 tablespoonscoconut oil, melted
- 1 tablespoon maple syrup
- Pinch of sea salt
To serve: coconut yoghurt or natural yoghurt
- Preheat oven to 180°C.
- In a saucepan, gently cook apples, dates, cinnamon, ginger, lemon juice and water for 5–7 minutes until just softened.
- Divide fruit mixture between four small ovenproof ramekins.
- In a bowl, combine almond meal, oats, coconut oil, maple syrup and salt.
- Spoon crumble topping over the fruit.
- Bake for 20–25 minutes until golden and bubbling.
- Serve warm with a dollop of yoghurt.
Hopewood Tip
- This dessert is naturally sweetened by fruit and dates.
- Add chopped walnuts or pecans for extra crunch if desired.
- Leftovers keep well in the fridge and reheat beautifully.
