Apple and Butter Bean Paté Ingredients Methods Serving suggestion • 75 grams butter beans • 2 tablespoons grated cooking apple or apple juice concentrate • 1 tablespoon tahini • 1 tablespoon parsley, finely chopped • 1 tablespoon coriander, finely chopped • juice ½ lemon • parsley to garnish 1. Blend butter beans, grated apple and tahini. 2. Season with herbs. 3. Chill for 1 hour to enhance flavours. 4. Garnish with parsley. Serve with raw vegetable crudité (e.g. celery, carrot, broccoli, cauliflower cut into sections) or lavosh bread or toasted Lebanese bread torn into bite-sized pieces. Tip: Keep crudités fresh by rinsing first and sealing them in a plastic bag in the fridge.
