Cranberry and baby spinach salad

Salad

• 300g baby spinach leaves
• 3/4 cup of cranberries
• 100g x walnuts
• 200g x feta cheese (or ricotta)
• 2 tablespoons sesame seeds (toasted)
• 1 cup raspberry dressing

Raspberry dressing:

• 300g fresh raspberries mashed
• 1 cup of water
• 1/8 cup x lemon juice
• 1 sprig thyme
• 4 tablespoons of apple cider vinegar
• 1 tablespoon of honey
• 1 tablespoon of arrowroot (mixed with water to thicken)
