No bake carrot cake
  • Prep time: Quick and easy but some hours of chilling required

• 5 cups grated carrot
• 1 cup almond meal
• 1/3 cup coconut flour
• 1/3 cup walnuts
• ¼ cup raisins
• ¼ cup craisins
• 2 drops lemon oil
• 1 teaspoon lemon zest
• 1 teaspoon cinnamon powder
• 1 teaspoon ground nutmeg
• 1 teaspoon vanilla extract

Gluten free vegan lemon frosting:

• 1/2 cup cashew nuts
• 2 1/2 tablespoons coconut oil
• 2 tablespoons honey
