• 1 Spanish onion diced
• 1 red capsicum diced
• 3 cloves crushed garlic

• ½ teaspoon cinnamon
• ½ teaspoon nutmeg
• 400g fresh diced tomato
• 3 cups stock
• 2 tablespoons tomato paste
• 1 cup corn kernels
• 2 tablespoons cut parsley
