On a roll – Fresh and tasty vegetarian rice paper rolls
As the warmer months roll in, these delicious, fresh and healthy rice paper rolls are perfect as a snack or meal. Light and packed with flavour, they are fun to make and you can use virtually any ingredients you like.
The rice paper itself is a starch we make from rice and is gluten-free – so it is very low in calories, which means you can pack them full of nutritious items! Try the delicious option below.
Fresh and tasty vegetarian rice paper rolls

Makes 8 rolls/ serves 2
• Rice paper x 8 sheets
• ¼ cabbage thinly chopped
• 200g of hard tofu
• ¼ cup of chopped coriander
• 1 chilli finely chopped
• 1 mango
• 1 avocado
• 1 cucumber
• ½ capsicum
• 8 mint leaves
1. Cut tofu into eight long thin pieces
2. In a pan, cook the tofu on medium heat
3. Chop the mango, avocado, cucumber and capsicum into long slender pieces (allowing one piece for each roll)
4. Wet a tea towel so it is completely damp and place it on a hard surface/bench. This helps to prevent the rice paper sheet from sticking to the surface when rolling.
5. Fill a large bowl with warm water and place one rice paper roll in the bowl of warm water for five second. Don’t let it soak or it will break apart when you try to make the roll.
6. Place the moist rice paper on the tea towel. Add one piece of each ingredient and a small handful of the cabbage, a sprinkle of chilli and coriander. Fold the side closest to you inwards, then each of the sides, and complete by rolling the roll away from you. Repeat this with each rice paper sheet.
7. Serve and enjoy!
