Looking for a refreshing fruity dessert to have on a hot afternoon? Try our banana and strawberry ice cream.

• 1 frozen banana per person*
• 3 frozen strawberries per person
• 1 teaspoon honey
• 1 teaspoon vanilla extract
• 2 tablespoons coconut milk

Put all the ice cream ingredients into a food processor and blend for 3-5 minutes until you obtain a smooth cream paste.

Put fresh berries or fruit salad in a dessert glass, cover with the ice cream and garnish with a slice of lemon and a sprinkling of coconut.

*TIP – if you have over-ripe bananas peel them, seal them in a container and store in the freezer. Making them into ice cream is a perfectly delicious way to ensure they aren’t wasted!
