Spicy potato wedges

Potatoes get a bad rap, but they have loads of nutritional benefits. They are packed with fibre, vitamins, minerals and phytochemicals.

Some research also suggests potatoes might help boost the immune system and reduce inflammation, making them perfect for winter.

Potato wedges are delicious to have as a snack or a side dish. Try our spicy potato wedges. They are perfectly crispy, fluffy and healthy!

  • 2 large potatoes, peeled
  • 1 tablespoon Italian herbs or other combination of herbs
  • seeded or plain mustard (optional)
  • Pre-heat the oven to 180°C.
  • Line a tray with baking paper.
  • Cut potatoes into wedges and place in a plastic bag containing herbs. Shake well to coat.
  • Arrange wedges on the tray and place in the oven.
  • Alternatively, dry the wedges using paper towels and lightly smear with mustard before putting in the oven.
  • Bake for 1 hour until crisp on the outside and soft in the middle.
