3 of Hopewood’s super salad dressings
1. Low fat mayonnaise
- 1 cup cottage cheese
- 2 teaspoons lemon juice
- 1 cup natural yoghurt
- 1 tablespoon cider vinegar
- 2 tablespoons water
- 2 teaspoons dry mustard
- Blend ingredients together and adjust to suit you taste and preferred consistency.
2. Yoghurt dressing
- 1 cup Greek-style yoghurt
- ½ tablespoon fresh turmeric, grated
- ½ tablespoon ginger, grated
- 1 garlic clove, crushed
- juice of ½ lemon
- 2 tablespoons sweet chilli sauce
- 1 tablespoon of your favourite herb
- Mix all ingredients together and let stand for 30 minutes before serving. Can be stored in an airtight container in the fridge for a week or more (dependent on the use-by date of the yoghurt)
3. Minted yoghurt
- 1 cup yoghurt
- fresh mint, finely chopped
- rind of ½ lemon, grated
- ½ Lebanese cucumber, grated
- Combine all ingredients
