Carrot cake energy balls

- 1 cup rolled oats
- 1/2 cup grated carrots
- 1/2 cup Medjool dates (pitted)
- 1/4 cup almond butter
- 1/4 cup shredded coconut
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ginger
- 1 teaspoon vanilla extract
- 1/4 cup raisins (optional)
- In a food processor, blend oats until they form a coarse flour.
- Add grated carrots, dates, almond butter, shredded coconut, spices, and vanilla extract. Blend until well combined.
- Stir in raisins, if using.
- Roll the mixture into small balls and refrigerate for at least 30 minutes before serving.
