Healthy Easter bunny cookies

And here’s another homemade Easter treat to enjoy with your friends and family.
- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup coconut oil (melted)
- 1/4 cup pure maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- Pinch of sea salt
- Dark chocolate chips (for eyes and nose)
- Preheat the oven to 175°C (350°F) and line a baking tray with parchment paper.
- In a bowl, mix almond flour, coconut flour, melted coconut oil, maple syrup, vanilla extract, baking soda, and sea salt until a dough forms.
- Roll out the dough between two sheets of parchment paper to about 1/4-inch thickness.
- Use a bunny-shaped cookie cutter to cut out the cookies and place them on the baking sheet.
- Press dark chocolate chips into each cookie to create eyes and a nose.
- Bake for 10-12 minutes or until the edges are golden. Allow to cool before serving.
