Spring vegetable stir-fry

Ingredients:

  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1 cup sliced carrots
  • 1 cup sliced bell peppers
  • 1 cup sliced mushrooms
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • Sesame seeds for garnish

 

Method:

  1. Heat olive oil in a large pan over medium heat.
  2. Add garlic and ginger, sauté for 1-2 minutes.
  3. Add broccoli, snap peas, carrots, bell peppers, and mushrooms. Stir-fry for 5-7 minutes until vegetables are tender-crisp.
  4. Add soy sauce and sesame oil, stir to combine.
  5. Garnish with sesame seeds and serve hot.
