Beetroot has high levels of nitrates which can reduce blood pressure and improve exercise performance. While beetroot is often cooked, it’s also great raw. Try our beetroot and hazelnut salad.

• 3 beetroots, washed, topped and tailed
• 2 cloves garlic, crushed
• ½ tablespoon balsamic vinegar
• ¼ cup hazelnuts, toasted and chopped
1. Grate beetroot.
2. Combine garlic and vinegar.
3. Toss beetroot in the dressing.
4. Garnish with the hazelnuts just before serving.
