Refreshing juice and smoothie popsicle recipes

Sugar-free watermelon mint icy poles are a delightful treat. They’re not only hydrating, but also a perfect way to cool down on a hot summer day without the need for added sugars. Why not experiment with other fresh fruits and herbs to create your unique sugar-free icy pole variations. For a delicious and more substantial snack, combine fresh fruit or fruit juice with some Greek yoghurt to make a smoothie mixture before freezing.

  • 3 cups fresh watermelon, seeded and cubed
  • 1 tablespoon fresh mint leaves, finely chopped
  • 1 tablespoon lime juice
  • 1/2 cup coconut water
  1. Remove watermelon seeds and combine in a blender with finely chopped mint leaves, lime juice, and coconut water. Blend until you achieve a smooth and liquid consistency.
  2. If you prefer a smoother texture, you can strain the mixture using a fine mesh sieve or cheesecloth (optional)
  3. Pour the blended mixture into icy pole cooking moulds, leaving a small gap at the top to allow for expansion. If you don’t have icy pole moulds, small cups with wooden sticks inserted work well too.
  4. Freeze for at least 4-6 hours or until completely solid. It’s advisable to check them periodically. If you are using small cups for the mould it’s best to insert the wooden sticks when the mixture has slightly set to keep them upright.
  5. Once the icy poles are frozen, remove them from the molds by running them under warm water for a few seconds. This will help loosen the popsicles. Enjoy!
