Peanut butter cookie bars

This decadent yet simple treat is perfect for cosy winter afternoons. It doesn’t even require baking!
- ½ cup creamy peanut butter
- ¼ cup melted coconut oil
- ¼ cup maple syrup
- 2½ cups almond flour
- 1 cup chocolate chips
- 1½ cups walnuts
- 2 tbsp cocoa powder
- 10 soft Medjool dates
- Line a 20×20 centimetre baking pan with parchment paper.
- Mix peanut butter, coconut oil, maple syrup, and almond flour until combined. Fold in chocolate chips.
- Press mixture into the pan and freeze while preparing the next layer.
- Blend walnuts, cocoa powder, and dates until smooth. Spread over the cookie layer.
- Freeze for 30 minutes, then slice into bars.
