Back to school: healthy treats for summer lunchboxes

As January rolls into February and school bags are dusted off, parents everywhere return to the rhythm of packing lunchboxes. But summer heat and busy mornings can make it tempting to reach for pre-packaged snacks. With a little planning, though, lunchbox treats can be both nourishing and exciting, fuelling young minds and bodies for the school day ahead.
Think cool, colourful and hydrating. Fresh fruit skewers with watermelon, grapes and kiwi offer natural sweetness and hydration. Mini veggie muffins made with zucchini, carrot and cheese are easy to batch bake and freeze. For a protein boost, try boiled eggs, hummus with veggie sticks, or mini falafel balls.
