Mushroom, spinach and sweet potato patties

Quick, easy, and full of flavour. These delicious and nutritious patties can be assembled with a few simple and healthy ingredients to satisfy the whole family – perfect for breakfast, lunch or dinner!

• 1 sweet potato, peeled
• 2 flat mushrooms, de-stemmed, scraped and chopped
• 4 button mushrooms, de-stemmed and chopped
• 2 garlic cloves, finely sliced
• ½ cup vegetable stock
• 3 cups spinach, washed and chopped
• 1 red onion, chopped
• black pepper
• ½ tablespoon thyme
• 1 teaspoon paprika
• ¾ cup buckwheat flour or whole meal flour

1. Boil the sweet potato and drain
2. While the sweet potato is boiling, sauté the garlic and mushrooms in a little stock until they start to soften
3. Add remaining stock and spinach
4. When the spinach is cooked, drain off the excess liquid and transfer the mixture to a food processor
5. Add the red onion, black pepper, thyme, paprika, sweet potato and buckwheat flour and combine
6. NB: This is quite a wet mixture but do not worry because the burgers firm up whilst cooking. Do not be tempted to add more flour to stiffen the mixture
7. Wet your hands and form 8 patties, placing them on a tray lined with baking paper
8. Bake in a moderate oven (180°C) for 25 minutes turning them after 15 minutes
9. Delicious served with homemade yoghurt dressing
