Warm up with this creamy mushroom and potato soup recipe

Not only are mushrooms a versatile and tasty snack, but they also contain vitamin B and a powerful antioxidant called selenium, which supports the immune system, preventing tissue and cell damage.

• 500gms mushrooms whole
• 200gms potatoes coarsely chopped or chats potatoes
• 1 large onion sliced
• 3 cloves garlic crushed
• 1 litre vegetable stock
• 1 litre milk or Soya milk or 1 litre of light milk or rice milk
• ½ bunch or ¼ cup fresh basil leaves chopped (1 tablespoon dried basil leaves)

• Fry mushrooms, onions, garlic, season with fresh or dried basil
• Add stock, potatoes, basil and cook until soft (approximately 30-40 minutes)
• Remove from heat add milk and blend.

• 2 sticks celery
• 2 carrots
• 200 grams sweet potatoes
• ½ bunch spinach
• 2 onions
• 200 grams pumpkin
• 4 litres water
• Salt and pepper to taste

Simmer for 1-2 hours and blend
