Turkish salad

Looking for a salad to bring to your next event? Why not try our Turkish salad, it’s green and red so looks festive for a Christmas spread.  It typically serves 4-6 people and can be altered depending on the event- 

  • 400 grams cucumber
  • 1 teaspoon pul biber or mild chili flakes
  • 150 grams walnuts, roughly chopped
  • seeds from ½ pomegranate
  • 2 tablespoons lemon juice
  • 1 garlic clove, crushed or to taste
      1. Split the cucumber in half, scoop out the seeds and discard.
      2. Slice the flesh into semicircles and mix together with the pul biber or mild chilli flakes, salt, walnuts and pomegranate seeds.
      3. Whisk the lemon juice and garlic together.
      4. Add to the salad, toss through and serve.
