Turkish salad
Looking for a salad to bring to your next event? Why not try our Turkish salad, it’s green and red so looks festive for a Christmas spread. It typically serves 4-6 people and can be altered depending on the event-
- 400 grams cucumber
- 1 teaspoon pul biber or mild chili flakes
- 150 grams walnuts, roughly chopped
- seeds from ½ pomegranate
- 2 tablespoons lemon juice
- 1 garlic clove, crushed or to taste

- Split the cucumber in half, scoop out the seeds and discard.
- Slice the flesh into semicircles and mix together with the pul biber or mild chilli flakes, salt, walnuts and pomegranate seeds.
- Whisk the lemon juice and garlic together.
- Add to the salad, toss through and serve.
