Mushroom nut loaf
Have you tried our mushroom nut loaf? It’s the perfect winter dish and it’s filled with healthy goodies like mushrooms, nuts, garlic, and cheese.
It will leave you feeling satisfied and can be eaten across multiple days.
- 1 whole onion, diced
- 300 grams mushrooms (including stalks), sliced
- 4 garlic cloves, chopped
- 200 grams almonds, ground
- 200 grams cashew nuts, ground
- 1 cup of parmesan cheese, shredded
- ½ cup chives, chopped
- 2 large eggs
- Yoghurt dressing (see Lifestyle-Hopewood’s Recipe for Wellbeing for our recipe)
- Place onion in a pan, add a splash of water and stir fry until they soften/brown.
- Add mushrooms, garlic and with another splash of water and toss in the pan until the mushrooms soften.
- Place mushroom mix in a bowl and add almonds, cashew nuts, parmesan cheese and chives.
- Mix ingredients together.
- Whisk eggs, pour over the ingredients and stir until it binds together.
- Once combined, place mixture in a 20cm loaf tin, lined with baking paper.
- Pack mixture down and cover the mixture completely with baking powder.
- Bake for 30 minutes at 180°C.
- Peel back baking powder from the top of the loaf and return to the oven for a further 10minutes to brown the top.
- Once baked, rest the loaf for 5 minutes before slicing it into portions and serve with yoghurt dressing.
