Low budget meals

Healthy meals don’t have to be expensive and elaborate. Here are three low budget meals that are easy to make.

Celery and corn soup

• 6 corn cobs
• 3 celery stalks, washed and chopped
• 2 cups chives or onion, chopped
• 6 cups vegetable stock
• Parsley, chopped

1. Strip corn from cobs.
2. Place all ingredients in a pot and bring to the boil.
3. Simmer until the corn is tender.
4. Place in a blender for 1 minute.
5. Reheat and serve garnished with parsley.

Cabbage and apple salad

• ¼ cabbage, finely sliced
• 2 large apples
• Juice of 1 lemon
• 1 tablespoon chives, chopped
• 1 teaspoon cumin seeds
• Olive oil (optional)
• 2 tablespoons cashews, roasted

1. Shred cabbage.
2. Grate apple and combine lemon juice to prevent browning.
3. Mix together with chives and cumin seeds and sprinkle with oil (optional).
4. Garnish with roasted cashews.

Spinach dahl

• 250 grams brown lentils, cooked
• 2 ½ cups water
• 2 cups spinach, chopped
• 4 shallots, chopped
• 2 teaspoons olive oil
• 1 large onion, finely sliced
• 2 garlic cloves, crushed
• ½ teaspoon turmeric
• Pinch of cinnamon

1. Wash lentils, place in a pan with water, spinach and shallots.
2. Cover and cook until lentils are soft – about 20 minutes.
3. In a separate pan, heat a little oil and fry onion, garlic, turmeric and cinnamon until onion is tender.
4. Add lentil mixture.
5. Simmer for a further 10 minutes.
6. Serve with boiled or fried rice.
