Tofu and Asian green satay

  • 1 Spanish onion, finely chopped
  • 4 cloves garlic, crushed
  • ½ small red chilli, crushed
  • 1 teaspoon ginger
  • ½ cup roasted peanuts
  • 1 tablespoon tamari
  • 2 teaspoons curry powder
  • 1/3 cup light coconut milk
  • 3 bok choy, chopped
  • 3 choy sum, chopped
  • 2 broccoli heads, chopped
  • 500 grams of tofu, cubed
  1. Gentry fry onion and garlic in a wok for about 2 minutes and set aside
  2. Place the chilli, ginger, peanuts, tamari, curry powder and coconut milk in a food processor and combine until smooth
  3. Add the satay mixture to the wok and return to the heat
  4. Toss through the bok choy, choy sum and broccoli for 3-5 minutes until lightly cooked
  5. Stir in tofu and allow to heat through
  6. Serve and enjoy!
