Blueberry Chia Seed Pudding

This blueberry chia seed pudding is a healthy and delicious breakfast option that’s packed with protein, fibre, and essential nutrients.   • 1/2 cup chia seeds
  • 2 cups unsweetened almond milk
  • 1/2 cup fresh blueberries
  • 1 tablespoon honey
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  1. In a medium bowl, whisk the chia seeds, almond milk, honey, vanilla extract and salt until well combined.
  2. Fold in the blueberries and stir gently to combine.
  3. Cover the bowl and refrigerate for at least 2 hours or overnight, until the mixture has thickened and the chia seeds have absorbed the liquid.
  4. Once the pudding has set, give it a good stir to make sure the chia seeds are evenly distributed throughout the mixture.
  5. Serve the blueberry chia seed pudding cold, garnished with additional blueberries and a drizzle of honey if desired.
