Blueberry Chia Seed Pudding
This blueberry chia seed pudding is a healthy and delicious breakfast option that’s packed with protein, fibre, and essential nutrients. - 1/2 cup chia seeds
- 2 cups unsweetened almond milk
- 1/2 cup fresh blueberries
- 1 tablespoon honey
- 1/2 teaspoon vanilla extract
- Pinch of salt
- In a medium bowl, whisk the chia seeds, almond milk, honey, vanilla extract and salt until well combined.
- Fold in the blueberries and stir gently to combine.
- Cover the bowl and refrigerate for at least 2 hours or overnight, until the mixture has thickened and the chia seeds have absorbed the liquid.
- Once the pudding has set, give it a good stir to make sure the chia seeds are evenly distributed throughout the mixture.
- Serve the blueberry chia seed pudding cold, garnished with additional blueberries and a drizzle of honey if desired.
