Mint, pea and avocado salad

This delicious, healthy and refreshing salad is ideal on a hot summer’s day.

  • 500 grams fresh peas, cooked and cooled
  • 3 avocados, peeled and cubed
  • 2 bunches fresh asparagus, washed and trimmed
  • 3 fresh mint leaves, chopped
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sweet chilli sauce
  • 1 tablespoon honey
  1. Steam the asparagus for one minute and set aside to cool
  2. Mix the vinegar, honey and chilli sauce
  3. Toss all the ingredients together and serve
