Mint, pea and avocado salad
This delicious, healthy and refreshing salad is ideal on a hot summer’s day.
- 500 grams fresh peas, cooked and cooled
- 3 avocados, peeled and cubed
- 2 bunches fresh asparagus, washed and trimmed
- 3 fresh mint leaves, chopped
- 2 tablespoons apple cider vinegar
- 1 tablespoon sweet chilli sauce
- 1 tablespoon honey
- Steam the asparagus for one minute and set aside to cool
- Mix the vinegar, honey and chilli sauce
- Toss all the ingredients together and serve
